Foods and beverages must be stored correctly for safety and to maintain quality. Perishable foods such as meat, poultry, fish, eggs or dairy products must be refrigerated or frozen to ensure safety and quality. The length of time a food can be stored depends on several factors including: the type of food, the length of time since the food was packaged or prepared, the packaging and the temperature of the food during storage both at the retail store and at home.
 
Many foods require refrigeration after opening. Keeping foods cold at 4°C or below is one of the best ways to prevent or slow the growth of harmful bacteria. It is important to follow storage instructions and best before dates written on food labels to ensure optimum quality and safety. Shelf-stable foods do not require refrigeration for proper storage, for example dried foods like uncooked rice and pasta, canned foods and unopened jars. At home, it is a good idea to write the purchase date on food packages and to rotate them on a regular basis.
